Veggies have everything fruit has, but without the fructose (carbs). I eat low carb and eat very little fruit, but a LOT of veggies. Low carb veggies include salad, broccoli, cauliflower, and summer squashes (but not winter). I have Dr. Atkins’ Carbohydrate Counter that I use when I come across something I’m not sure of. It’s pocket sized and available at any bookstore. Remember you do not have to count fiber as it is non-digestible and won’t raise blood sugar.
Stay away from peas, corn (corn is a grain, not a veggie), winter squashes, and watch your consumption of tomatoes and carrots.
The lowest carb fruits are berries. Strawberries are the lowest of those. The highest carb fruits to avoid are grapes and bananas (this also includes raisins).
I advise you get a book that explains low carb and various low carb diets. If you can, pick up Jonny Bowden’s book “Living the Low-Carb Life” along with a carb gram counter at your local bookstore.
Low-carb is a wonderful and healthy way to eat – the science proves it. Good luck and don’t listen to the naysayers.
As for meals, try to stick to meat, veggies, eggs, and some lower-carb dairy. I personally love cottage cheese. Soy products are often low in carbs – soy burgers and tofu are healthy and high in protein, low in carbs. Just cook up some meat (whatever kind) with a side of broccoli, etc. I plan my daily menus using FitDay.
A typical breakfast on Atkins was two eggs and two slices of bacon. Nowadays I try to get the fat down a little and have egg whites (or Egg Beaters) with a slice of fat free cheese and a 1/2 cup of low-fat cottage cheese. Either of these options work for a low-carb diet.
