scoop out the middle and mash it together with either a hard boiled egg with a little low fat spread or
mix with low fat cottage cheese.

    tuna & sweetcorn
peppers and low fat soft cheese
cous cous with nuts and raisins
coronation chicken made with low fat mayo
chopped hard boiled egg with chives
    ham and pineapple
smoked salmon and low fat soft cheese
    crab
lean cold roast beef with horseradish
lean herbed mince (ground beef or lamb)
Many of the above could be served hot with toasted brown breadcrumbs on top.
If you get tired of tomatos you can also stuff peppers.

Buy the little cans of white meat chicken. You can find them right by the canned Tuna. Chop up the chicken, add either fat free mayo or yogurt, chopped scallions, red peppers.
